Oil is tested with electronic device to measure the Total Polar Compounds (TPC%) that tells us the he quality of the oil (How much is broken down molecularly). Oil gets treated with our blend of NSF approved colorless and odorless powder that act as a stabilizer and adsorbent to give it extra life. This reduces soluble impurities (that can't be remove with filtering alone) formed during the frying process that cause off-odors, off-flavors, off-colors, free fatty acids and polar compound formation.
Our two person team work together to make sure the fryers get degreased and scrubbed throughly on the inside, front, sides, and back panels as well as the controller and drain valve bottom area.
Oil is circulated through our unique dual carbon filter machine. With this process we are able to remove impurities down to .5 microns as well as the stabilizer and adsorbent powder.
Filtered oil is placed back in and fryers are checked to make sure gas pilots are on and the units is ready for use.
